You can set the step where a piece should appear by selecting it and then going to the Properties toolbar and changing it directly.
You can also assign shortcuts to the Piece ShowEarlier/ShowLater actions in the Preferences dialog Keyboard tab and use them to change it. I just realized these options don't have a default shortcut anymore, I'll add them for the next version.
