We would write 'gn' when G is sharped or flattened in the key (which is not
very often for G) and write 'g' when G-natural is native to the key.
LilyPond separates the concept of the key and the pitch-names, but some of
us think of A through G as scale-step names, and mentally translate B into
bf or b for LilyPond depending on the key. The dominant seventh in f\major
has its B altered from the key, so it is natural to spell <c e g bn>.
Hopefully we remember to spell the ii-minor <g bf d> but if we type <g b d>
a quick search for naked 'b' will find such errors.
