IMAP is still plain text. Your login format is
. login username password

Still plain text.
Some servers like cyrus do support other mechanisms like CRAM-MD5, or
GSSAPI (kerberos), which are more secure as compared to plain/login.
You can have a secure pop3 server using TLS.
