If you are novices, then it probably isn't prudent to switch production systems over straight away. My suggestion would be to get two test boxes, load squid on one, and qmail/sendmail on the other. Test out usage with these two first. You can periodically try your exchange through the proxy/gateway machine. When you are satisfied - after about a month - you can migrate either just the proxy or both proxy and mail.
