If you want real 5.1 sound you'd need a proper 5.1 speaker setup.
You won't get the surround effect etc with just your headphones.
if you want to watch a 5.1 movie on headphones and hear all the sound streams
you'll need to set the "Downmix" control to 6->2
These days even integrated sound cards do 5.1 :-)
