Yes 5.1/6-channel sound is just 3 sets of stereo cables, so you should be
able to test the channels 2 at a time with a pair of headphones.

By default only to Front Left/Right speakers.
But you can toggle "Spread Front to Surround and Center/LFE" in alsamixer to
spread it to all channels.

No. I don't have an .asoundrc file and everything works fine for me.

No probs! Took me forever to get my 5.1 setup running (didn't help that my
motherboard manual had the connectors labelled wrong)
