Indeed, an open standards product is definitely the way to go.

Asterisk is great although not necessary if you simply want to make VoIP phone 
calls.

There are many great SIP softphones for Linux. Twinkle is a great app for KDE 
users.

There are also heaps of SIP based hardphones available (not currently very 
available in NZ but I have some inside knowledge that that is about to 
change :).
