If it is EXIF or IPTC then some graphics apps will keep the data when saving a jpg. If it is a newer camera besides the time/date etc. with EXIF you also have a 160x120 thumbnail along for the ride. I still use windows for graphics but I bet that gimp probably saves the extra data. I remember reading that imagemagick also saves EXIF data. There are cross application display problems with EXIF data saved files sometimes.
