See the title crawl to Star Wars before it was known as Episode IV; see the
pioneering, if dated, motion control model work on the attack on the Death
Star; groove to Lapti Nek or the Ewok Celebration song like you did when you
were a kid; and yes, see Han Solo shoot first.

They got rid of Lapti Nek and the Ewok Celebration Song in the revamped
versions? I never saw them so I didn't know. Outrage! Atrocity!

You don't know the half of it.

There was also the change to the sarlok with the addition of the 'beak' (or whatever you want to call that thing). Or to paraphrase how one friend of mine put it, instead of looking like a female genital it looked like a male one.

The only change I can remember off-hand to Empire was the addition of Vader's shuttle during the escape from Cloud City. Is there anything else that I'm forgetting from that movie?

Empire?  Only that they added windows to a lot of the Cloud City.  That makes sense.  If you had that view you'd certainly take advantage of it.  But they also redid the Falcon arriving at Cloud City.  Much like the new Mos Eisley stuff, cg ships, more view of the city, that sort of thing.
