The only change I can remember off-hand to Empire was the addition of Vader's shuttle during the escape from Cloud City. Is there anything else that I'm forgetting from that movie? junior Empire?  Only that they added windows to a lot of the Cloud City.  That makes sense.  If you had that view you'd certainly take advantage of it.  But they also redid the Falcon arriving at Cloud City.  Much like the new Mos Eisley stuff, cg ships, more view of the city, that sort of thing.
