You could use a weak key, or actually drill a hole through the shaft,
and through the sprocket. Then a sheer pin would go through it. It
would hold up under normal acceleration, but not under motor lockup
and extreme torque. Used lots of places. We'd use them in robotics at
my last job, in case the head came down on a solid object, it wouldn't
strip gears.
