It would also be trying to lift itself by its bootstraps. :) I.e., if
the shore power was already on and I switched the inverter on, it would
have to fully come up to power the relay... whoops. :)

I'd thought about that; I think that's the best and simplest approach.

This would have the inverter output going through the normally-closed
(NC) pair, so there's no standby current draw at the relay. Whenever I
plugged in shore power, it wouldn't get connected to the system until
the relay flipped - at which point, the inverter would be out of the
circuit. If the inverter is on and the shore power is off, the shore
plug is out of the circuit, and thus no juice coming out of it.
Given that a 20A 120V DPDT relay is only about $15 at Digi-Key, I
suppose I ought to add that to my (huge) list of projects. :)
