I use VSTs all the time with default settings and they rarely crash.
There are affinity issues using VSTs on Windows, which I workaround with
some hackish scripts, but in my experience those issues affect performance,
not stability.
I use the free (as in beer) plugins DPC/ GTG, DSK which tend to be very
stable.
That said, I use these sparingly because of the performance issues and due
to a bug that prevents them from using relative paths on win32.
