(these two are _very_ closely related). The sendmail.org FAQ alone
provides sufficient material for a good start (but there's oh so much
more)
I would focus on large sites (multiple domains for e-mail/DNS)
within networking, I'd make sure candidates had a good understanding of
the output of tcpdump and what it tells them.
I'm sure there's a lot more -- it will come, little by little.
