Chad, I once tried to switch a RedHat server from CUPS to LPRng. I couldn't figure out what was wrong when I first did it. I had switched everything but it still wanted to print CUPS. I finally realized I had to run the RedHat configuration tool to change print services. RedHat has a specific program (I can't recall the name of it right off) that has to be run to switch from CUPS to LPRng. I wouldn't even bother removing CUPS. You can leave all the programs there and they will not cause any problems and you shouldn't run into the dependency hell you are in. Hope this helps.
