Yes, this is indeed the way I went here. We've got two computer labs now
with around 25 places each over LTSP, using Firefox, OOo and Wine. When
there was only 1 lab, 2 GB were ok, with the second one I extended it to
4 GB. The system nearly never uses its swap space (just around 300 kB
were record until now), and response times are good. The system is a
double Xeon with 2.4 GHz and only two SATA disks as a software Raid.

I use ksysguard to watch the server's load. When many students log in at
the same time, ksysguard tends to hold the display and show it later,
this is kinda drawback. But I can watch loads building up very well, and
I found out that RAM tends to be the number one bottleneck, not disk
performance. You can watch how Linux is using its RAM for buffering as
much as it can, and with more and more users logging in, buffer is
decreased to give way for system space. But it's not that much one might
expect per user. Of course, with (virtually) 4 CPUs, load balances very
good too.
so are you using a couple of HT Xeon for thoose 50 clients?
I've searched trough the list and I found an open office issue, maybe
I can solve the hang removing some locking files. I will let you know
about that.
