Sorry, i was not clear enough.

fish:// is just something you type in your Dolphin application, like http:// 
or ftp:// Its not a protocol.

The underlying protocol it uses to connect to the server is ssh. I think, but 
this is a hunch, that sftp is pretty much the same.

So, if you have ssh-server running on your server (so, if you can ssh from the 
command prompt), thats all you need on the server.

I dont use nautilus or ubuntu, so i am not sure how you can directly connect 
to an sftp/ssh server from it. If i remember correctly this was discussed 
about 6 months back though, on the list, so perhaps try to search the archives 
of the LUG mailinglist.
