Indeed there are considerable regional differences:
In some places they like Posners stuffed with cracked green wheat and
egglant and roasted, and in others they like them grilled on a spit and
sprinkled with za'atar, usually green, or red in Beirut.

I'm not sure what you mean by "uniformity of ideology", but Islam has
all sorts of conflicting views about everyday life, some of which
(for example: how a woman should dress in public) get a great deal of
Western attention these days. So any blanket statement about what
Islam does or does no allow should be received skeptically.
