"Settings" works but the problem with Configure/Customize/Set/Specify is 
that they imply that new settings will be configured after selecting the 
menu item rather than that the existing ones will be retained.

(Those phrasings are better suited to a non-checkbox menu item which 
calls up a dialog box)

Recall and Restore are both too strongly synonymous with "Load" so it 
feels odd to use them with a checkbox menu item.

(Those phrasings are better for immediate/explicit save/load actions 
rather than controlling automatic save/load in the background.)

While less ideal than "Remember", "Store" would work if you want to save 
three characters since the checkbox makes "Store This Folder's Settings" 
feels like a policy decision rather than an immediate action.

In summary, here is the viable subset of your suggestions:

View > Preserve This Folder's Settings
View > Remember This Folder's Settings
View > Store This Folder's Settings

However, since Preserve is the same length as Remember but Remember is 
far more commonly used (and, hence, more familiar to users), I see no 
benefit to using it.
