I like Logic Studio's "pro" look.  It's gray enough to not distract you from 
content, but icons still have color and detail .. and there are color cues 
throughout the app.
Maybe not necessary for "iTunes" .. but, with iTunes 10, I now spend more time 
reading icon labels vs identifying the icon via color and detail.
