fn-delete (that is, press the delete key with the fn key held). This deletes
the character to the right of the cursor.

If you select text by using the shift key in combination with cursor movement
keys, then start typing, the selected text is replaced by whatever you type -
that is, the selected text is deleted before the text that you enter is
inserted.

I'm sure this is all explained in OS X tutorials that you can read for further
details.
