I've been using a Mac for a long time, and htese aspects have never
bothered me at all. I'm efficient and navigating and reading on the Web
and in applications generally. The truth is that different operating
systems have different conventions and solve the same problems
differently. I'm used to adapting to that - Linux, macOS, Windows, iOS,
and an Android-based braille device are all in my life and I just switch
between them without any issue.
If the way a particular operating system works really bothers you, then
use something else if you can. For example, I don't particularly like
Windows, partly for the privacy and security reasons that are well
known, and partly due to the fact that it isn't a UNIX-like system,
whereas everything else I use on the desktop (macOS and Linux) is. You
can run Windows Subsystem for Linux or install UNIX-like tools on a
Windows system, but there are limitations. On the other hand, if I want
to use Microsoft 365 tools for full compatibility with MS-Office formats
or collaboration, then Microsoft's tools under Windows are still best
for that (although for many purposes, there are alternatives suitable
for macOS or Linux, and also consider Google Workspace).
Tagged PDF in macOS Preview is definitely available now. I haven't used
it extensively, but it has worked with tagged documents that I've read.
If you need full OCR support then a tool such as ABBYY would be worth
investigating.
Whenever I find actual bugs, I do of course report them to Apple as part
of the beta program. However, deliberate design decisions aren't bugs,
so I don't report those. Apple has always taken the "do it the way we've
designed it to be used" attitude - the same for everyone, whether using
screen readers or not. Their designers think they know best, so you
either accept that or you don't and move on to an alternative.
