I occasionally use an older version of Surfer (Goldensoftware) to develop contour lines, but I think the newest version will work just as well. Surfer was designed to draw contour lines between points when engineers surveyed areas in the Rocky Mountains for roads, minerals, and other resources. As a result, it is very robust and allows the user to modify the algorithm that calculates the position of the contours, or to simply select one of the numerous pre-defined algorithms. You don't need to know a lot of math to use it well, but if you are a mathematician/statistician, this program is for you! HSI Geotrans used to sell a program (Surflink) that would serve as a bridge between Surfer and MapInfo and automate the process of drawing the lines from tabular data.
