I am quite familiar with most of the GIS packages. Maptitude is a good deal. Caliper Corp is friendly, so is Maptitude. I teach courses in public health uses of GIS using other packages. Maptitude classes are making serious maps before lunch on Monday. Other packages allow students to get their own results with some ease about Wednesday. The manual that comes with Maptitude is very easy to use and if you do the "One Minute Exercises" from start to finish you will definitely have a secure grasp of how to proceed with your own data. And of course there is this listserve to help you if you get stuck.
