The Centennial Museum currently has hit counters on 16 of about 3500+ pages. These include the home page and sections we are especially interested in (special projects, our specialty area [Chihuahuan Desert], a new section we are evaluating for usage, etc.). Aside from the number of hits (tabulated daily and with statistics accessible for the day, week, month, and annual periods), we take a sample of 100 to 200 hits daily primarily as snapshots of use distribution among those pages, nations of origin, origination by city for pages of special interest, and "unique" visitors (those not having visited within the last 12 hours--it turns out that about 1/3 of the hits represent "unique" visitors).
We also keep a record of requests originating from web usage (such as requests for image usage and for additional information about subjects treated on the web pages).
