My guess is that you are having problems related to MAX_PATH; copying files and folders that are more than 255 characters in length cause that type of failure, and your path starts off pretty long:
\\myserver.mydomain.com\build$\Operating Systems\Windows 8.1 Enterprise x64 with KB2919355\sources\sxs When you add in the very long component folders under SXS, you could easily exceed that limit. Try using a shorter OS folder name. Also note that this type of issue can also manifest itself when importing the OS image in the first place, causing the SXS folder to be incomplete. You may or may not have run into that if you are using a local path (e.g. C:\Deploy) that is shorter than the UNC path.
