The 27GB FAT partition can be resized without losing data
and a btrfs partition (or several) could be added on eMMC.

If properly used the small but fast NAND has several advantages:

* it could be used as a fast cache for common, frequently used files.
The cached files could be accessed by aufs, bind-mounts or symlinks.

* it could act as a rescue system that contains all essential
components. The user could decide whether to boot the full system from
eMMC or the minimal rescue system from flash.
By flashing only the small NAND the eMMC contents would preserved
(instead of flashing the whole eMMC).
