IMHO, passing up on FIOS is, for a geek, one of the least understandable decisions in all of recorded history. There's plenty of ways to solve the problem you're talking about, and still get FIOS, be it business grade, or linode, or whatever. But denying yourself the bandwidth FIOS offers seems like cutting one's nose to spite one's face.
