Honestly I don't think 240-250 is all that bad
considering how hot it's been here and you had the AC
on.  I reguarly see 230 in my GLi on the auto-x
course, without the AC on!

I wouldn't bother with a low temp thermostat and fan
switch.  If you really want to lower oil temps, the
external oil cooler is good for at least a 20 degree
change in lite driving and up to 50 degrees on the
track.
