Check your radiator. When I started running hot it was because my radiator was just not flowing as well as it used to. Years of gunk seem to take its toll after a while. A new radiator from Adirondack, low temp switch and thermostat took my temps from 250 to 212 almost all the time. My AC is not working now so I can't tell you about that but when I really get on the car I won't see temps higher than 230 or so.
I heard that there is a way to clean it out but I doubt you can really get everything out of there without taking the radiator apart which I think is not even possible. Larry 91 GTI 16V
