I upgraded my computer a few days ago and I had the same concern as you.
My new motherboard is an ASUS M5A97 R2.0(Windows 8 Ready). I didn't have
to change anything in the BIOS and I was able to boot Kubuntu 12.04. On
my second drive I have Windows 7, this took a little more work to get
running since Windows had to detect all the hardware again, but I have
both operating system working and I didn't need to disable anything in
the BIOS in regards to UEFI.

However, I don't know if installing Windows 8 would change any of this,
but I have absolutely no intention of finding out. Windows 7 is the last
Microsoft OS that I intend to use on my home computer. With Valve Steam
currently in testing on Linux, I intend to stop using Windows entirely
in 2013.
