Well, a friend sent me what she could remember as ingredients, but some were omitted, and the directions were not included. With some tweaking, adding, and guesswork, I came up with these ingredients and made this wonderful dessert. It is expensive to make but oh so scrumptious to eat. SWEET POTATO BREAD PUDDING 4 large eggs 1 pint heavy cream 1 tsp vanilla 1/2 tsp cinnamon 1 loaf (minus 5-6 slices) of Captain John Derst yellow bread 1/2 small can of Bruce yams, mashed) 1/4 lb brown sugar 6 oz white chocolate chunks(I used Nestle white chocolate chips) � cup pecans (optional) Mix eggs, heavy cream, vanilla, and cinnamon together. Break up bread into pieces and add to mixture along with the sweet potatoes, and stir all up. Gently fold in the brown sugar, white chocolate, and pecans. Bake for 35 minutes at 350�. Cooking times and settings may vary in metal or glass baking dishes. I cooked mine in a big oval white-ribbed Corningware dish. Caramel Sauce: 1/4 lb. brown sugar 1 stick butter 1/2 pint heavy cream Melt sugar and butter completely over medium heat, approximately 10 minutes. Add the heavy cream, and cook on low for about 15 minutes more. Serve over warm bread pudding.
