Down Home and Southwest Recipes</a>

Friday, September 2, 2005 newsletter has been posted online.
http://www.nancys-kitchen.com/september-2-2005.htm

I am sending two newsletters out today. One for August 31, 2005 and
one for September 1, 2005. I am behind on posting messages and am
about 300 messages behind in getting them all posted. The main
problem is lack of space in the newsletter for
all the messages and yesterday when the site went down there are even
more messages to post. Most of
http://www.nancys-kitchen.com is up
and running but I haven't checked all sections yet.

Thought for the Day

SALMON SOUR CREAM CASSEROLE
2 (8 oz.) fresh or frozen salmon steaks, cut 1 inch thick
1/4 c. dairy sour cream
1/4 c. mayonnaise or salad dressing
1/4 c. green onion
1 tsp. lemon juice
1/4 tsp. salt
1/4 c. shredded Cheddar cheese (1 oz.)

Thaw salmon, if frozen. Place salmon steaks flat on cutting surface.
Halve steaks lengthwise perpendicular to cutting surface, removing
center bones. Place the 4 pieces of salmon in a 10x6x2 inch baking
dish. Bake uncovered in a 450 degree oven for 12-15 minutes or just
until fish flakes easily with a fork. Meanwhile in a small bowl
combine sour cream, mayonnaise, green onion, lemon juice, salt. Spoon
over salmon. Sprinkle cheese on top. Bake 3-4 minutes more until
sauce is just heated through. Makes 4 servings.

Edible Play Dough
1/2 Cup creamy peanut butter
1/4 cup honey
1/2 cup instant dry milk powder
2 tbsp powdered sugar (or more for taste)

Mix and knead into a pliable dough, adding more powdered sugar if
necessary. You can roll this out and cut with mini cookie cutters.
Use the powdered sugar as your "flour" for rolling. You can also use
for modeling. Tastes good too.
