Just because we are moving swiftly doesn't mean we are going anywhere.

September and October 2004 (last year's ) newsletters will be deleted

Corn Dog Casserole 
2 cups finely minced celery
2 Tbsp butter
1-1/2 cups sliced green onions
1-1/2 pounds of hot dogs (I use Oscar Meyer beef)
2 eggs
1-1/2 cups milk
2 tsp sage
1/4 tsp black pepper
1/4 tsp salt
2-8.5 oz Jiffy muffin mix
8 oz sharp Cheddar Cheese shredded

Sauté celery in butter for 5 minutes. Add onions and continue cooking 
2 minutes. Dump skillet ingredients into a large bowl. Cut hot dogs 
in half lengthwise, then chop into bite size pieces. Sauté dogs in 
skillet; turning to brown. Add to bowl. Reserve 1 cup of hot dogs & 
veggies in a small bowl. Slightly beat eggs & milk together. Add egg 
mix and next 4 ingredients to bowl. Add 1-1/2 cups of cheese to bowl 
also. Mix all ingredients well. Spray 13x9 Pyrex. Pour in casserole. 
Top with reserve hot dogs and cheese. Bake uncovered 400* for 30 
minutes.

*I made this for a birthday get together along with string beans, 
salad and a trifle. It was a real hit.

CROCK POT SLOPPY JOES
2 pounds lean ground beef 
1 medium onion, chopped 
2 cloves garlic, minced 
1 cup ketchup 
1/2 bell pepper, chopped 
3 Tblsp. Worcestershire sauce
3 Tblsp. brown sugar
2 Tblsp. prepared mustard
2 Tblsp. cider vinegar
1-1/2 tsp. chili powder
Hamburger buns 

In a heavy skillet, brown ground beef with onion and garlic. Drain 
off excess fat. Combine ketchup, bell pepper, Worcestershire sauce, 
brown sugar, mustard, vinegar, and chili powder in slow cooker. Stir 
in ground beef mixture. Cover and cook on LOW setting for 7 to 9 
hours. Serve spooned over hamburger buns, with a side salad.

Impossible Coconut Custard Pie
4 eggs 
1/4 cup margarine 
1/2 cup flour 
1 cup sugar 
1 tsp. vanilla 
1/4 tsp. salt 
1/2 tsp. baking powder 
2 cups whole milk 
1/2 cup shredded coconut 

Preheat oven to 350 degrees. Put all ingredients into blender at 
once. Blend until mixed thoroughly. Pour into 9" pie pan and bake 50 
minutes.
