I use both Ubuntu 14.04 and OS X for development and our production servers
are RHEL 6.6.

I've previously used Mint on the desktop and it was fine, but plain Ubuntu
just seems to be the path of least resistance.

On the RHEL servers my current frustration is the apparent dearth of recent
JDKs in the officially-sanctioned Yum repos (at least if our system
administrator is to be believed.) For this reason we're still stuck on Java
1.6. I guess that's the "enterprise" for you, though that's a bit of a
misnomer at our scale.

If I had my way we'd probably run Ubuntu (or at least Debian) on the
server, mainly because I'm more familiar with it.
