A sheet of plexiglass at an angle will work on a sailboat. Saltwater evaporates, the watervapor hits the plexiglass, slides down the slope and collects in another container. Plenty of sun power, the only problem is sloshing salt water into your fresh water container. You'll have to ask the waves to calmdown and not tack, that or mount it on a gimble. Why not make it wind power?
