I am quite ignorant about all these hardware problems, but my setup is perhaps a little like the one you are thinking about: I bought a new PM G4 as you know, but I still use my older machine (PM 7600), mainly as printer server. It is a PS printer (Oki Microline 600PSII), connected to the printer port of my old machine. As it is a PS printer, I can use Apple LaserWriter printer driver (with the PDD file for the printer). My G4 is connected to PM 7600 via a Ethernet hub/router; and PM 7600 runs with an extension named "LocalTalk Bridge". Of course, as PM 7600 has only 10 MBits Ethernet connection, the speed is not so high, but it is largely sufficient for my use (anyway, my printer itself is very slow...).
I've been thinking on this problem for quite long now, - and the Jaguar is still grinning at me here on my desktop.... - eeh... my writing table of course.... The 'solution' might be that I setup one of my older
machines - fx. a PM 7600 as a printer server, so I can use my other machines and let this 'oldie' do the print jobs for me. - But this will also require a true 100mbits network here, and for the moment I have enough to
use/spend my money to.
As the printer driver is not specific for my printer, there are some fonts that it cannot print (specifically, the Mojikyo ttf fonts that I converted from Windows format); but otherwise, for my usual use, I have no (too much...) problem.
Your problem is surely different, because you cannot find the driver for your printer. But as to the network speed, I think 10 Mbit Ethernet is sufficient.
I don't know if this is of any help for you, but who knows...
