Well, for some of the things you mentioned, I'd do it in a logon script... Setting the printer, what printer is default, home and search pages in IE can all be done with Kixstart. I have some scripts we use here if you want that info (email me directly). If you happen to know the registry hack for the setting for the default mail client you could load the user's hive in Regedt32 and then make the change there. I'm afraid I don't know the registry setting to change specifically, though.
