Because unless I was seriously misled by my software reseller I can run an unlimited number of copies of Datacenter in VM off the single copy I purchased. Anyone that KNOWS (as opposed to thinks) different please educate me.

A server licensed for Datacenter Edition can run any number of Standard, Enterprise or Datacenter edition vm's. Given that you probably wont the capabilities for Enterprise Edition in a vm during the lifetime of dpm 2007, there's no reason to run DataCenter there. If you can see it on a Windows server, then DPM can "recognize" it.
