We have the Datacenter license as well for all our virtualized servers. However, we still run the standard Windows Server on 95% of or systems. Licensing lasts you so long and then it might change. We run the Enterprise Edition on our domain controllers and certificate servers and a handful of other boxes. If you are using the Enterprise Edition of Server 'because you can' and not because you 'need to', then it may reduce your flexibility in future licensing discussions. Not to mention possible 3rd party software that may be tied to a server version as well.
