I set up a WDS server on an existing 2K3 server on my LAN, added the Win2K8 .wim, and just PXE booted my servers that didn't have boot DVD drives.

Boots fine with Dell startup/install DVD, when I try to install Server 2998 (is an option on menu) install fails - cannot see DVD to get the OS files.
