No. No one here on this list will tell you if your plans are legal . They will tell you if they see violations and illegal activity, but they (at least, the smart ones) won't tell you that anything is legal. That would be giving legal advice, and for all any of us know you might have a federal injunction against you making it illegal for you to publish anything.
If you want to know if something is legal, hire a lawyer. If you want help hiring a lawyer, the Free Gaming Assocation can help out; e-mail me off-list (or just reply in general) and I'll scare up the information


All that said... a book of "giants as PC races" sounds like a great idea, and could probably be done rather well. Feel free to try anything that you believe is legal--even the people who have committeed gross copyright infringement haven't (to my knowledge) been sacked by Hasbro's goon squad (a bunch of magic-addicted Go-Bots fans, I understand).
Just be ready to either fight it in court (which means that you've hired and listened to a lawyer who is "your lawyer") or bow-over when the bigger fish look at you funny.
