This is an issue for the community of users here to put forth an idea on, and then have the Apache OpenOffice PPMC decide how to configure this mail list server. Good discussion so far.

Most of the mail lists I participate in include something to indicate

it possible for this list to do the same? IIRC, the old OOo list
included "Users" in the subject line and libreOffice includes
"libreoffice-users".

Personally I hate auto-added subject line stuff, but my opinion really doesn't matter here: this is a forum where helpful users (and especially folks answering questions) can find it easiest to do work.

Note that all Apache mailing lists (i.e. from an @*.apache.org address) use the List-Id: header (set by our mailing list program, EZMLM), which will look like this for this list:

  List-Id: <ooo-users.incubator.apache.org>

If you use Thunderbird (any recent release), you can easily sort mail on this header by doing:

Tools - Message Filters... (for v8.0, may be different for early versions)

New... (to create a new filter - be sure you're in the correct mail account, if your Thunderbird has multiple email accounts)

In the Filter Rules dialog, under the "Match all/any..." setting, pop up the first header in the list box (normally says "Subject")

Select Customize... in the dropdown

In the Customize Headers dialog, type in a New Message Header: List-Id

Press OK

I usually select "Contains" for the next field

In the third field, enter the list id of this list. Note that I often just enter the first part of the list id, if it's unique within my subscriptions (i.e. I only subscribe to one ooo-users list): ooo-users

Set the Perform these actions: appropriately to move these messages to the right folder

Press OK and then run the filter to test it.

P.S. Nearly all mail clients support filters quite simply these days:

Setting up filters for pine, mutt, and the like is left as an exercise for the reader. 8-)
