The initial boot is entirely independent of anything installed on the computer. As long as the computer supports booting 7.5, you could boot it with Windows installed on the Mac. You're partly right though, it would boot but since 7.5 doesn't support HFS+ you'd see a volume with a "Where have all my files gone?" Simpletext doc explaining the HFS+ thing.
