Hi John, 
Try mounting the 7.5 CD icon on your desktop;

Open up the Finder window and rename your 8.5 System Folder
Nuts and Bolts or something - don't use the name system.

Open that "Old System Folder" and drag the "Finder" to the trash
and empty it.

This works well with the System 7's - but this going backwards
isn't in the installer's programming IMO.

Theoretically now when you open up your 7.5 CD Installer Program
and select easy install (for your PPC only) the installer won't find
the other system folder and will let you install OS 7.5.

But if it fails you are out the 2.4 MB Finder - unless you can file share
or otherwise copy and save it before you trash it.

If worse comes to worse you can just find another 
8.5 Install CD, restore the name of the original System Folder
and "custom install" via the installer - another Finder.

As for the old "Nuts and Bolts" folder sitting there when you restart
into 7.5. . . . let me know if the 7.5 installation was successful and I'll 
tell you what to do with everyting there- from what you want to keep to
HOW to trash what you don't want.
