FYI: I use an Adaptec 29160N (yes I know its 32 bit!) in my Powermac 7500
(same setup as the original poster) and it's powered by twin Quantum Atlas
10K 18 gig drives.  I have a G3/500 Newertech processor in it (by the way
guys, NEWERTECH IS BACK!!!) and I do not use and highly recommend YOU do not
use any adapters of any kind as anything you introduce can cause slower
speeds.  I bought top of the line SCSI cables and terminators and still
routinely get about 38MB/sec transfer rates.  Trust me, it may be over kill
but as far as transfer rates, I NEVER have a dropped frame or a skipped beat
from video or music.

I am however looking into 7200RPM Firewire drives as an alternative or
possibly for backup.  Good luck!
