HI, I've recently been toying with the idea of doing this - although I've not actually done it. Very easy to do. 1, You need a phono pre-amp, Maplin have them on offer at the moment for �12.49. Get one. 2, Plug your record player into the pre-amp then into your mac's phono-in sockets. 3, Select phono-in as the input (rca in?) and run SoundApp or similar to catch the input as aiff files. Then chop the captured audio into tracks and burn via toast.
