since i am swedish I dont know what is startup school - kindergarden ?
stick with system 8.5.1 -> 8.6 and yes get some more ram.
GURU says that "this machine may be configured with an optional video
in out card" & seems that you should be able to get a video card AVID
CINEMA card, it has stereo sound in and out, and subwoofer audio
capability, plaintalk microphone.

it's always a good thing to reformat the disk when something is handed to you,
but nortons wipe info would work for just deleting the personal files

maybe an USB card for a printer if you can't get an older printer ?

system 7.5.3 -> 7.5.5 is free as a dowmload from apple.

I have a program called Claris Animation (for children) and I do
recommend KID PIX for drawing - and a photoshop 3 or 4,

an extra used scsi hd drive would be a good idea, kept safe - on
that you can keep a copy of a working systemfolder (with all the
preferences etc the way you want them) and then when/if an error
occurs you just replace the entire systemfolder (saving the mail and
internet bookmarks first) from that workin copy forever and ever.
you can also use the extra hd as emergency startup disk and keep disk
tool utilities on that one.
