Open firmware is present on all macs regardless of what's installed. Its kind of like a BIOS found on pc machines, as it checks your ram and where to boot the OS from and stuff like that. Usually you don't see it, but to put BSD (or any other form of UNIX) on there you have to play around with it.
Not ALL Macs have Open Firmware. I believe it started with the first PCI Macs (7200, 7500 & 8500).
