It is ALWAYS safer to distiller on the same machine you print on. For the everyday person, you're absolutely right. However, I've been making bulletproof PDFs for six years (since Acrobat 3), and long before Adobe offered job options in Distiller "and" made the default settings in Press to embed and subset fonts.
