Having the camera level does no good if the platform you are rotating it upon is not level. And I've found you can't really rely on the little tik marks on the head's pivot shafts. So first level the tripod head's base if there is room on it, if not remove it and level the tripod's head baseplate then level the camera using a hotshoe level if that's what you have. Now the horizon (seen or unseen) should be level, and panoramas will stitch with less work and distortion.

Not that I've ever actually prepared enough for a pano to that extent, they usually present themselves so I shoot them.
